Ingredients

2 steaks (ribeye, sirloin, or New York strip, at least 1-inch thick)

1–2 tablespoons olive oil

1–1½ teaspoons kosher salt

½ teaspoon ground black pepper

1 teaspoon seasoning blend (optional: garlic powder, paprika, Italian herbs)

2 tablespoons unsalted butter (for topping)

1 garlic clove, minced (optional, for garlic butter)

1 teaspoon fresh herbs: rosemary, parsley, or thyme (optional, for garlic butter)
Instructions

Room Temperature: Remove steaks from the fridge 30 minutes before cooking for the juiciest texture. Pat dry thoroughly.

Season: Drizzle steaks with olive oil and season generously with salt, pepper, and chosen spices on both sides.

Preheat the Air Fryer: Run the air fryer at 400°F (200°C) for 3–5 minutes so the basket is hot.

Cook: Place the steaks in the basket (don’t overcrowd). Air fry for 9–12 minutes for 1-inch steaks, flipping halfway. For medium-rare, aim for about 10 minutes total. Adjust time for thicker or thinner cuts, and always check internal temperature: 125°F for rare, 135°F for medium-rare, 145°F for medium.

Rest: Remove steaks to a plate, tent very loosely with foil, and let rest 5 minutes for juices to redistribute.

Finish (optional): While resting, top with garlic herb butter or a pat of plain butter and let it melt over the steaks.
