Ingredients
For the Cherry Filling:

2 cups fresh or frozen cherries, pitted

¼ cup granulated sugar

1 tablespoon cornstarch

1 teaspoon vanilla extract

1 teaspoon lemon juice
For the Pastry:

1 sheet puff pastry (thawed)
For the Crumble Topping:

¼ cup all-purpose flour

¼ cup packed light brown sugar

3 tablespoons cold unsalted butter, diced

½ teaspoon ground cinnamon (optional)
For Glaze (optional):

½ cup powdered sugar

1–2 tablespoons milk or lemon juice
Instructions

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

Prepare the cherry filling: Combine cherries, sugar, cornstarch, vanilla, and lemon juice in a saucepan. Cook over medium heat, stirring, until cherries release juices and mixture thickens (~5 min). Remove from heat and let cool.

Roll out puff pastry sheet on a lightly floured surface. Cut into 4 equal squares or rectangles.

Place a spoonful of cherry filling in the center of each pastry square.

For the crumble: Mix flour, brown sugar, and cinnamon. Cut in cold butter until mixture resembles coarse crumbs. Sprinkle evenly over cherry filling.

Bake the danishes for 15–18 minutes or until puffed and golden brown.

(Optional) Mix powdered sugar and milk or lemon juice for glaze. Drizzle over warm danishes before serving.
