12 oz fettuccine pasta

2 boneless, skinless chicken breasts, thinly sliced

4 tablespoons unsalted butter, divided

8 oz cremini or button mushrooms, sliced

3 cloves garlic, minced

¾ cup Marsala wine

1 cup chicken broth

½ cup heavy cream or half-and-half

¼ cup chopped fresh parsley

Optional: grated Parmesan cheese for serving
Instructions

Cook fettuccine according to package instructions until al dente. Drain and set aside.

Season chicken slices with salt and pepper. In a large skillet, heat olive oil and 2 tablespoons butter over medium-high heat.

Add chicken and cook until golden brown and cooked through, about 4-6 minutes per side. Remove chicken from skillet and set aside.

In the same skillet, melt 2 tablespoons butter. Add mushrooms and sauté until browned, about 5-7 minutes.

Add garlic and cook 1 minute until fragrant. Pour in Marsala wine and simmer until reduced by half, about 3-4 minutes.

Stir in chicken broth and cook until sauce slightly thickens, about 5 minutes.

Lower heat and stir in heavy cream. Simmer for 2-3 minutes until sauce thickens. Return chicken to skillet to warm through.

Toss cooked fettuccine into the sauce until evenly coated.
