  • 12 oz fettuccine pasta

  • 2 boneless, skinless chicken breasts, thinly sliced

  • Salt and pepper to taste

  • 2 tablespoons olive oil

  • 4 tablespoons unsalted butter, divided

  • 8 oz cremini or button mushrooms, sliced

  • 3 cloves garlic, minced

  • ¾ cup Marsala wine

  • 1 cup chicken broth

  • ½ cup heavy cream or half-and-half

  • ¼ cup chopped fresh parsley

  • Optional: grated Parmesan cheese for serving


Instructions

  1. Cook fettuccine according to package instructions until al dente. Drain and set aside.

  2. Season chicken slices with salt and pepper. In a large skillet, heat olive oil and 2 tablespoons butter over medium-high heat.

  3. Add chicken and cook until golden brown and cooked through, about 4-6 minutes per side. Remove chicken from skillet and set aside.

  4. In the same skillet, melt 2 tablespoons butter. Add mushrooms and sauté until browned, about 5-7 minutes.

  5. Add garlic and cook 1 minute until fragrant. Pour in Marsala wine and simmer until reduced by half, about 3-4 minutes.

  6. Stir in chicken broth and cook until sauce slightly thickens, about 5 minutes.

  7. Lower heat and stir in heavy cream. Simmer for 2-3 minutes until sauce thickens. Return chicken to skillet to warm through.

  8. Toss cooked fettuccine into the sauce until evenly coated.

  9. Garnish with fresh parsley and grated Parmesan before serving.
