Description
A decadent dessert with a chewy chocolate chip cookie or Oreo crust, topped with smooth, creamy cheesecake and extra cookie bits for crunch.
Ingredients
For the Cookie Crust:

1 ½ cups crushed chocolate sandwich cookies (Oreos) or 1 batch chocolate chip cookie dough*

1/3 cup melted butter (if using Oreos)
For the Cheesecake Filling:

24 oz (3 blocks) cream cheese, room temp

1 cup granulated sugar

1/2 cup sour cream
-
3 large eggs
-
1 teaspoon vanilla extract

1 cup chocolate chips or chunks (optional)
Optional Toppings:

Extra cookies or cookie crumbs

Melted chocolate drizzle

Whipped cream
Instructions

Preheat oven to 325°F (165°C). Grease a 9-inch springform pan.

For an Oreo crust: Mix cookie crumbs with butter, press into pan bottom, and bake for 10 minutes. For a cookie dough crust: Press dough in the bottom, bake for 15–18 minutes, then cool completely.

For filling: Beat cream cheese and sugar until creamy. Add sour cream, then eggs one by one, then vanilla. Fold in chocolate chips/chunks if using.

Pour filling over crust. Tap to remove air bubbles.

Bake for 48–55 min or until edges are set and middle is just slightly jiggly.

Cool to room temperature, then chill at least 4 hours (preferably overnight).

Before serving, top with whipped cream, extra cookies, or a chocolate drizzle if desired.
