Crust:

  • 2 cups cinnamon graham cracker crumbs or crushed churro cookies

  • ¼ cup granulated sugar

  • 6 tablespoons unsalted butter, melted

Filling:

  • 4 packages (8 oz each) cream cheese, softened

  • 1 ¼ cups granulated sugar

  • 1 teaspoon ground cinnamon

  • 4 large eggs

  • 1 teaspoon vanilla extract

  • ⅓ cup sour cream

Topping:

  • ½ cup granulated sugar

  • 1 tablespoon ground cinnamon


Instructions

  1. Preheat oven to 325°F (163°C).

  2. Combine crust ingredients; press evenly into bottom of a 9-inch springform pan.

  3. Beat cream cheese until smooth, gradually add sugar and cinnamon.

  4. Add eggs one at a time, mixing well after each.

  5. Mix in vanilla and sour cream until fully combined.

  6. Pour filling over crust and smooth top.

  7. Bake 60-70 minutes until edges are set but center still slightly jiggles.

  8. Mix topping sugar and cinnamon; sprinkle evenly over hot cheesecake for a cinnamon sugar crust.

  9. Cool completely, then refrigerate at least 4 hours before serving.
