  • ½ cup unsalted butter, room temperature

  • ⅓ cup honey (use high-quality honey for best flavor)

  • 1 cup brown sugar

  • 2 large eggs, room temperature

  • 1 teaspoon vanilla extract

  • ⅓ cup granulated sugar (for rolling)


Instructions

  1. Preheat oven to 350°F (180°C) and line two large baking sheets with parchment paper.

  2. In a large bowl, whisk together the flour, cornmeal, cornstarch, baking powder, and salt.

  3. In another large mixing bowl, cream the butter and brown sugar together until soft and light.

  4. Add the honey, eggs, and vanilla extract to the butter mixture and mix until well combined.

  5. Gradually add the dry ingredients into the wet mixture, mixing until just combined.

  6. Using a large cookie scoop, portion out dough, roll into balls, then roll the dough balls in the granulated sugar. Place them on the baking sheets.

  7. Gently press down on each cookie ball with the bottom of a glass or your palm to flatten slightly.

  8. Bake for 10-15 minutes until the edges begin to turn golden.

  9. Let cool completely on baking sheets before serving.
