Description

This soup transforms the viral Marry Me Chicken into one-pot comfort food. Creamy tomato broth, shredded chicken, sun-dried tomatoes, and spinach come together with parmesan and soft pasta or tortellini for pure love in a bowl.


Ingredients

  • 1 ¼ lb boneless skinless chicken breasts

  • Salt & pepper, to taste

  • 1 ½ tsp Italian seasoning

  • 1 yellow onion, diced

  • 23 celery stalks, diced (optional)

  • 1 medium carrot, diced (optional)

  • 3 tablespoons butter or olive oil

  • 1 (8 oz) jar sun-dried tomatoes, drained & chopped; 2 tbsp oil reserved

  • 3 cloves garlic, minced

  • 2 tablespoons tomato paste

  • ¾ tsp each: dried basil, oregano, parsley

  • 1 tsp Dijon mustard

  • 1 tsp honey

  • 56 cups chicken broth

  • 1 chicken bouillon cube (optional)

  • 12 cups cooked shredded or diced chicken (use rotisserie or cooked breast)

  • ¾ cup dry pasta (ditalini, orecchiette, or tortellini, ~10 oz refrigerated)

  • 1 cup heavy cream or half-and-half

  • ½ cup grated parmesan cheese, plus more for garnish

  • 3 cups packed baby spinach

  • Red pepper flakes (optional)

  • Fresh basil to garnish (optional)


Instructions

  1. Season and sear chicken, then set aside and dice or shred.​

  2. Sauté onion, carrot, and celery in reserved sun-dried tomato oil or butter until soft; 3-5 minutes.​

  3. Add garlic, sun-dried tomatoes, tomato paste, Italian seasoning, dried herbs, Dijon, and honey; cook for 1-2 minutes.​

  4. Pour in chicken broth and bouillon, scraping up any browned bits. Blend until smooth if a silky texture is desired.​

  5. Add cooked chicken back; simmer for 10-15 minutes. Add pasta or tortellini and simmer until just cooked (about 8-10 minutes, depending on shape).​

  6. Stir in cream and parmesan cheese. Add spinach in the last minute; let it wilt.​

  7. Season with salt, pepper, and red pepper flakes to taste. Top each bowl with fresh basil and more parmesan if desired.
