Ingredients
Marinade:

½ cup olive oil

¼ cup soy sauce

¼ cup balsamic vinegar

1 ½ tablespoon Worcestershire sauce

1 tablespoon Dijon mustard

1 tablespoon honey or brown sugar

5 cloves garlic, minced

½ teaspoon kosher salt

½ teaspoon ground black pepper
For the Skewers:

1 ½ pounds top sirloin steak or sirloin roast, cut into 1-inch cubes

3 bell peppers (any color), cut into 1-inch pieces

1 small red onion, cut into 1-inch pieces

Wooden or metal skewers (if wooden, soak in water 30 minutes prior)
Instructions

In a large bowl, whisk together all marinade ingredients until smooth.

Pat dry the beef cubes with paper towels, pierce with a fork a few times, then add to marinade. Toss well, cover, and refrigerate for at least 6 hours or overnight.

Preheat oven to 375°F (190°C). Line a rimmed baking sheet with parchment paper or foil.

Remove beef from marinade (discard leftover marinade). Thread beef, peppers, and onion pieces alternately onto skewers, about 3-4 pieces of beef per skewer.

Arrange skewers evenly on the prepared baking sheet.

Bake for 10-15 minutes, then broil for 3-4 minutes, turning once halfway through, until beef reaches desired doneness (medium rare ~130°F, medium ~140°F).

Remove from oven, tent loosely with foil, and rest about 5 minutes before serving.
