Crust:

  • 1 ½ cups graham cracker crumbs

  • ¼ cup granulated sugar

  • 6 tablespoons unsalted butter, melted

Filling:

  • 4 packages (8 oz each) cream cheese, softened

  • 1 ¼ cups granulated sugar

  • 4 large eggs

  • 2 teaspoons vanilla extract

  • 2/3 cup sour cream

  • 2/3 cup heavy cream


Instructions

  1. Preheat oven to 325°F (163°C).

  2. Mix graham cracker crumbs, sugar, and melted butter until combined. Press mixture evenly into the bottom of a 9-inch springform pan.

  3. In a large bowl, beat cream cheese until smooth. Gradually add sugar and beat again. Add eggs one at a time, mixing well after each.

  4. Blend in vanilla, sour cream, and heavy cream until filling is smooth and creamy.

  5. Pour filling over the crust in the springform pan.

  6. Bake for 60-70 minutes or until edges are set and center slightly jiggles.

  7. Turn off oven, crack oven door, and let cheesecake cool in oven for 1 hour to prevent cracking.
