Description

This soup features savory Italian sausage, tender cheese tortellini, and nutrient-packed kale or spinach in a creamy tomato broth. It’s a quick and satisfying one-pot meal perfect for chilly evenings or feeding a hungry family.


Ingredients

  • 1 pound ground Italian sausage (hot or mild)

  • 1 small yellow onion, diced

  • 3 cloves garlic, minced

  • 1 teaspoon dried basil

  • ½ teaspoon oregano

  • 1 pinch cayenne pepper (optional)

  • 1 teaspoon hot sauce

  • ½ teaspoon mustard powder

  • ¼ teaspoon black pepper

  • 1 pinch crushed red pepper flakes

  • 3 tablespoons all-purpose flour

  • 5 cups chicken broth

  • 1 cup heavy cream (optional)

  • 2 cups chopped kale or spinach

  • 2 cups refrigerated or frozen cheese tortellini (about 910 oz)

  • Salt to taste

  • Olive oil or butter for sautéing


Instructions

  1. Remove sausage from casings if needed. In a large pot, cook sausage and diced onion over medium-high heat until sausage is browned and onions soften, about 8-10 minutes. Drain excess fat.​

  2. Add garlic; cook 1 minute. Stir in flour; cook 1-2 minutes to remove raw taste.

  3. Add basil, oregano, cayenne, hot sauce, mustard powder, pepper, and red pepper flakes. Stir well.​

  4. Pour in chicken broth and scrape bottom of pot to loosen browned bits. Slowly stir in heavy cream. Bring to a boil; reduce to a simmer.

  5. Add kale and tortellini. Simmer 3-5 minutes until pasta is tender (adjust timing based on tortellini package).​

  6. Salt to taste. Serve hot with optional grated Parmesan and crusty bread.
