Ingredients
-
1 pound ground Italian sausage (hot or mild)
-
1 small yellow onion, diced
-
3 cloves garlic, minced
-
1 teaspoon dried basil
-
½ teaspoon oregano
-
1 pinch cayenne pepper (optional)
-
1 teaspoon hot sauce
-
½ teaspoon mustard powder
-
¼ teaspoon black pepper
-
1 pinch crushed red pepper flakes
-
3 tablespoons all-purpose flour
-
5 cups chicken broth
-
1 cup heavy cream (optional)
-
2 cups chopped kale or spinach
-
2 cups refrigerated or frozen cheese tortellini (about 9–10 oz)
-
Salt to taste
-
Olive oil or butter for sautéing
Instructions
-
Remove sausage from casings if needed. In a large pot, cook sausage and diced onion over medium-high heat until sausage is browned and onions soften, about 8-10 minutes. Drain excess fat.
-
Add garlic; cook 1 minute. Stir in flour; cook 1-2 minutes to remove raw taste.
-
Add basil, oregano, cayenne, hot sauce, mustard powder, pepper, and red pepper flakes. Stir well.
-
Pour in chicken broth and scrape bottom of pot to loosen browned bits. Slowly stir in heavy cream. Bring to a boil; reduce to a simmer.
-
Add kale and tortellini. Simmer 3-5 minutes until pasta is tender (adjust timing based on tortellini package).
-
Salt to taste. Serve hot with optional grated Parmesan and crusty bread.
