Ingredients
1 cup unsalted butter, softened
1 cup granulated sugar
1 cup brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
2 teaspoons ground cinnamon
2 cups peeled and finely chopped apples (about 2 medium apples)
Optional: ½ cup chopped walnuts or pecans
Instructions
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together softened butter and sugars until light and fluffy.
Beat in eggs one at a time, then add vanilla extract.
In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
Gradually add dry ingredients to wet and mix until combined.
Fold in chopped apples and nuts if using.
Drop rounded tablespoons of dough onto baking sheets approximately 2 inches apart.
Bake 12-15 minutes or until edges are golden and centers are set.
Cool on baking sheets for 5 minutes; transfer to wire racks to cool completely.
