1 pound medium shrimp, peeled and deveined

Vegetable oil, for frying
For the Boom Boom Sauce:

½ cup mayonnaise

3 tablespoons sweet chili sauce

1–2 tablespoons sriracha (adjust to taste)

1 tablespoon lime juice or rice vinegar

1 teaspoon garlic powder
Instructions

In a bowl, whisk flour, cornstarch, paprika, salt, and pepper.

Toss shrimp in dry mixture until evenly coated.

Heat oil in a deep skillet or fryer to 350°F (175°C). Fry shrimp in batches until golden and crispy, about 2-3 minutes. Drain on paper towels.

In a separate bowl, whisk together all sauce ingredients until smooth.

Toss fried shrimp gently with Boom Boom sauce until evenly coated.
