Ingredients
4 large flour tortillas (10-inch size)
6 large eggs
½ cup milk
Salt and pepper to taste
1 cup shredded cheese (cheddar, Monterey Jack, or blend)
1 cup cooked breakfast sausage or bacon, crumbled
½ cup diced bell peppers
½ cup diced onion
1 cup cooked diced potatoes or hash browns (optional)
Salsa, sour cream, and avocado (optional toppings)
Cooking oil or butter
Instructions
In a bowl, whisk eggs with milk, salt, and pepper.
In a skillet, heat a small amount of oil or butter over medium heat. Cook bell peppers and onions until softened (3-4 minutes).
Add potatoes or hash browns if using and cook until lightly browned.
Pour egg mixture into the skillet and scramble with vegetables until just set.
Stir in cooked sausage or bacon and shredded cheese, cooking for an additional minute until cheese melts. Remove from heat.
Warm tortillas in a dry skillet or microwave.
Divide egg mixture evenly among tortillas, placing filling in the center. Fold sides in, then roll burrito tightly from one end.
Serve immediately with salsa, sour cream, and avocado, or wrap for later.
