Ingredients
4 tablespoons butter
1 small yellow onion, finely chopped
3 cloves garlic, minced
4 cups broccoli florets
4 cups chicken broth
1 cup heavy cream
2 cups shredded sharp cheddar cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon dried thyme
Instructions
Heat butter in a large pot over medium heat.
Sauté onion until softened, about 5 minutes.
Add garlic and cook for 1 minute.
Add broccoli florets and chicken broth, bring to a boil.
Simmer for 10 minutes until broccoli is tender.
Blend half the soup with an immersion blender or in batches until smooth.
Stir in heavy cream, cheddar cheese, salt, pepper, and thyme until cheese is melted.
Adjust consistency with additional broth if needed.
