Ingredients
2 boneless, skinless chicken breasts
1 tablespoon olive oil
Salt and pepper to taste
1 large head romaine lettuce, chopped
1 cup Caesar dressing (store-bought or homemade)
1 cup croutons
½ cup grated Parmesan cheese
Optional: lemon wedges, anchovy fillets
Instructions
Preheat grill or grill pan over medium-high heat. Brush chicken with olive oil and season with salt and pepper.
Grill chicken 5-7 minutes per side, or until fully cooked (internal temperature 165°F/74°C). Let rest 5 minutes, then slice thinly.
In a large bowl, toss chopped romaine with Caesar dressing until evenly coated.
Add grilled chicken, croutons, and grated Parmesan. Toss gently to combine.
Serve immediately, garnished with lemon wedges or anchovy fillets if desired.
