  • ¼ cup unsweetened cocoa powder

  • 3 large eggs

  • ¾ cup evaporated milk

  • 2 tablespoons all-purpose flour

  • 1 teaspoon vanilla extract

  • ¼ teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C).

  2. Mix chocolate cookie crumbs and melted butter until combined. Press mixture evenly into a 9-inch pie plate to form the crust. Bake crust 8-10 minutes. Remove and let cool.

  3. For the filling, in a microwave-safe bowl, melt chocolate chips in 30-second intervals and stir until smooth.

  4. In a large bowl, whisk sugar, cocoa powder, eggs, evaporated milk, flour, vanilla, and salt until smooth, then stir in melted chocolate.

  5. Pour filling into cooled crust and bake 40-45 minutes until center is set but slightly jiggly. Cool completely on a wire rack, then chill at least 3 hours.
