Ingredients
For the Crust:
1 ½ cups chocolate cookie crumbs (e.g., Oreos, finely crushed)
5 tablespoons unsalted butter, melted
For the Filling:
1 cup semi-sweet chocolate chips
¾ cup granulated sugar
¼ cup unsweetened cocoa powder
3 large eggs
¾ cup evaporated milk
2 tablespoons all-purpose flour
1 teaspoon vanilla extract
¼ teaspoon salt
Optional Topping:
Whipped cream or chocolate shavings
Instructions
Preheat oven to 350°F (175°C).
Mix chocolate cookie crumbs and melted butter until combined. Press mixture evenly into a 9-inch pie plate to form the crust. Bake crust 8-10 minutes. Remove and let cool.
For the filling, in a microwave-safe bowl, melt chocolate chips in 30-second intervals and stir until smooth.
In a large bowl, whisk sugar, cocoa powder, eggs, evaporated milk, flour, vanilla, and salt until smooth, then stir in melted chocolate.
Pour filling into cooled crust and bake 40-45 minutes until center is set but slightly jiggly. Cool completely on a wire rack, then chill at least 3 hours.
Serve chilled or at room temperature, topped with whipped cream or chocolate shavings if desired.
