Description

For the Pancakes:

  • 1 ½ cups all-purpose flour

  • 3 ½ teaspoons baking powder

  • 1 teaspoon salt

  • 1 tablespoon granulated sugar

  • 1 ¼ cups milk

  • 1 large egg

  • 3 tablespoons unsalted butter, melted

For the Cinnamon Swirl:

  • ½ cup brown sugar

  • 2 teaspoons ground cinnamon

  • 2 tablespoons unsalted butter, melted

For the Cream Cheese Glaze:

  • 4 ounces cream cheese, softened

  • ¼ cup powdered sugar

  • 2 tablespoons milk

  • ½ teaspoon vanilla extract


Instructions

  1. In a large bowl, whisk together flour, baking powder, salt, and granulated sugar.

  2. In another bowl, whisk milk, egg, and melted butter. Combine wet and dry ingredients until just mixed; lumps are okay.

  3. Stir together brown sugar, cinnamon, and melted butter in a small bowl to make the cinnamon swirl.

  4. Heat a non-stick skillet or griddle over medium heat and lightly grease.

  5. Pour ¼ cup pancake batter onto the skillet. Spoon a teaspoon of cinnamon swirl over the pancake and use a toothpick or skewer to swirl it through.

  6. Cook until bubbles form on the surface and edges look set, about 2-3 minutes. Flip and cook another 1-2 minutes until golden.

  7. For the glaze, beat cream cheese, powdered sugar, milk, and vanilla until smooth. Drizzle over warm pancakes before serving.
