Ingredients
For the Pancakes:
1 ½ cups all-purpose flour
3 ½ teaspoons baking powder
1 teaspoon salt
1 tablespoon granulated sugar
1 ¼ cups milk
1 large egg
3 tablespoons unsalted butter, melted
For the Cinnamon Swirl:
½ cup brown sugar
2 teaspoons ground cinnamon
2 tablespoons unsalted butter, melted
For the Cream Cheese Glaze:
4 ounces cream cheese, softened
¼ cup powdered sugar
2 tablespoons milk
½ teaspoon vanilla extract
Instructions
In a large bowl, whisk together flour, baking powder, salt, and granulated sugar.
In another bowl, whisk milk, egg, and melted butter. Combine wet and dry ingredients until just mixed; lumps are okay.
Stir together brown sugar, cinnamon, and melted butter in a small bowl to make the cinnamon swirl.
Heat a non-stick skillet or griddle over medium heat and lightly grease.
Pour ¼ cup pancake batter onto the skillet. Spoon a teaspoon of cinnamon swirl over the pancake and use a toothpick or skewer to swirl it through.
Cook until bubbles form on the surface and edges look set, about 2-3 minutes. Flip and cook another 1-2 minutes until golden.
For the glaze, beat cream cheese, powdered sugar, milk, and vanilla until smooth. Drizzle over warm pancakes before serving.
