Ingredients
1 cup cookie butter spread (Biscoff or Speculoos)
2 cups all-purpose flour
1 cup packed brown sugar
1/2 cup unsalted butter, melted
2 large eggs
1 teaspoon baking soda
1/4 teaspoon sea salt
3/4 cup crushed Biscoff cookies (optional, heavily crushed)
Instructions
Preheat oven to 350°F (180°C)
Line a 9×13-inch baking pan with parchment paper
In a large bowl, mix melted butter, brown sugar, and cookie butter spread until smooth
Whisk in eggs, baking soda, and sea salt
Stir in flour and crushed Biscoff cookies until fully combined
Press dough evenly into prepared pan
Bake for 25-28 minutes, until golden and a toothpick inserted still has some gooey crumbs
Let cool completely before cutting into bars
Notes
If cookies are too dry, add 1-2 tablespoons milk or buttermilk
