Description
Tender chicken breasts are slow-cooked in a rich, herb-infused sauce made with roasted tomatoes, Greek yogurt, and aromatic garlic for a budget-friendly and elegant Italian-American dinner, all while remaining pork- and alcohol-free.
Ingredients
2 lbs Chicken Breasts (boneless, skinless)
1/3 cup Olive Oil
4 large Garlic (cloves, minced, roasted)
2 cups Low-Sodium Chicken Broth
1 cup Nonfat Greek Yogurt (plain)
1 teaspoon Dried Oregano
1/2 teaspoon Caraway Seeds
Salt, to taste
Instructions
Preheat oven to 400°F. Place parchment paper on a baking sheet and oven-bake chicken breasts for 10 minutes to sear.
In a 6-qt crockpot, whisk together olive oil, roasted garlic, oregano, and salt.
Layer seared chicken breasts into the crockpot, then add chicken broth.
Cover and set the crockpot to low heat; cook for 4 hours.
After turning off the crockpot, stir in Greek yogurt and caraway seeds to thicken the sauce.
Remove chicken and rest for 5 minutes before serving.
Notes
Parchment paper helps with cleanup.
Skim excess liquid after baking to keep the chicken moist.
Add a pinch of sugar when thickening the sauce to balance acidity.
Let chicken sit briefly before removing to avoid tearing.
Use oven-ready chicken breasts for best results.
Greek yogurt is essential for the creamy texture and can be substituted with coconut yogurt for vegan options.
