Ingredients
3 boneless, skinless chicken breasts
1/2 cup all-purpose flour
1/2 teaspoon garlic powder
Salt and pepper to taste
2 large eggs
3/4 cup grated Parmesan cheese
1/2 cup breadcrumbs
1 tablespoon olive oil
Instructions
Preheat oven to 400°F (200°C)
Using a meat mallet, pound chicken breasts to an even 1/2-inch thickness
Season both sides of the chicken with salt and pepper
Place flour, garlic powder, and salt in a shallow dish
Whisk eggs in another shallow dish
In a third dish, combine Parmesan cheese and breadcrumbs
Dredge chicken in flour, shake off excess
Dip into beaten eggs, letting excess drain
Coat evenly with Parmesan-breadcrumb mixture
Arrange on a baking sheet lined with parchment paper
Drizzle olive oil over the coated chicken
Bake for 25-35 minutes or until the coating is golden and the chicken reaches 165°F internally
Let rest for 5 minutes before serving

For gluten-free version, use GF flour and breadcrumbs
