1 pound ground beef (80/20 or lean)
1 small yellow onion, finely diced
2 cloves garlic, minced
2 tablespoons taco seasoning (store-bought or homemade)
1 (14.5 oz) can diced tomatoes, undrained
Optional: taco shells or tortillas (corn or flour)
Optional toppings: shredded lettuce, diced tomatoes, avocado, cilantro, lime, cheese, pickles


Instructions

Heat a large skillet over medium heat and add 1 teaspoon oil.
Sauté onion and garlic until softened, 2-3 minutes.
Add ground beef, breaking up clumps, and cook until no longer pink.
Stir in taco seasoning, salt, and pepper to taste. Cook 2 minutes to bloom flavors.
Add diced tomatoes (with juice) and simmer 5-10 minutes until slightly thickened.
Warm tortillas/taco shells separately. Serve beef mixture with toppings of choice.
