2 cloves garlic, minced
2 tablespoons taco seasoning (store-bought or homemade)

Instructions
Heat a large skillet over medium heat and add 1 teaspoon oil.
Sauté onion and garlic until softened, 2-3 minutes.
Add ground beef, breaking up clumps, and cook until no longer pink.
Stir in taco seasoning, salt, and pepper to taste. Cook 2 minutes to bloom flavors.
Add diced tomatoes (with juice) and simmer 5-10 minutes until slightly thickened.
Warm tortillas/taco shells separately. Serve beef mixture with toppings of choice.
Notes
Make ahead: Cooked beef mixture can be refrigerated for 3-4 days.
Use fire-roasted tomatoes for deeper flavor.
Try turkey or plant-based beef substitutes for variations.
Use a cast-iron skillet for smokier results.
Add shredded cabbage, jalapeños, or salsa for extra crunch.
