Description
A warm, comforting peach cobbler made quick and easy using canned peaches. The sweet, juicy filling is topped with a fluffy, golden biscuit crust, perfect for dessert served with ice cream or whipped cream.
Ingredients
Filling:
2 cans (15 oz each) sliced peaches in syrup, drained (reserve ¼ cup syrup)
½ cup granulated sugar
1 tablespoon cornstarch
¼ teaspoon ground cinnamon
1 teaspoon lemon juice
Topping:
1 cup all-purpose flour
1 cup granulated sugar
1 teaspoon baking powder
¼ teaspoon salt
1 cup milk
½ cup unsalted butter, melted
Optional: ½ teaspoon vanilla extract
Instructions
Preheat oven to 350°F (175°C). Grease a 9×9-inch baking dish.
In a medium bowl, combine drained peaches, sugar, cornstarch, cinnamon, lemon juice, and reserved syrup. Mix gently to coat. Pour into prepared dish.
In another bowl, whisk flour, sugar, baking powder, and salt. Add milk, melted butter, and vanilla extract if using. Stir to combine into a smooth batter.
Pour batter evenly over peach mixture. Do not stir—batter will spread and rise as it bakes.
Bake for 45-50 minutes, until crust is golden and firm and peach filling is bubbly.
Let cool slightly before serving. Best served warm with vanilla ice cream or whipped cream.
