Ingredients
2 ripe avocados
1 cup mixed fresh herbs (parsley, basil, chives, tarragon)
2 tablespoons fresh lemon juice
1/2 cup full-fat Greek yogurt or mayonnaise
1 small garlic clove, minced
4 cups mixed greens
1/2 cucumber, sliced
1 stalk celery, chopped
1/2 bell pepper, diced
2 green onions, thinly sliced
Instructions
Blend avocados, herbs, lemon juice, garlic, and half the yogurt/mayo until smooth
Season dressing with salt and pepper to taste
