Ingredients
12 oz farfalle pasta
3 tbsp extra virgin olive oil
4 cloves garlic, minced
2 cups cherry tomatoes, halved
4 cups fresh baby spinach
1/2 cup reserved pasta water
Salt and black pepper to taste
Optional: red pepper flakes or grated parmesan for garnish
Instructions
Bring a large pot of salted water to a boil and cook the farfalle according to package directions until al dente.
Reserve 1/2 cup of the starchy pasta water, then drain the pasta.
While the pasta cooks, heat olive oil in a large skillet over medium heat.
Add the minced garlic and sauté for 1 minute until fragrant.
Add the cherry tomatoes and cook for 5-7 minutes until they start to break down and form a sauce.
Add the cooked pasta and the reserved pasta water to the skillet, tossing to coat.
Add the fresh spinach and stir until it just begins to wilt.
Season with salt and pepper to taste and serve immediately.
Notes
Ensure you add the spinach at the very end to maintain its bright color and avoid overcooking. If the sauce looks too dry, add an extra splash of olive oil or more pasta water. This dish stores well and tastes excellent as leftovers the next day.
