Ingredients
8 oz bittersweet or semisweet chocolate, finely chopped
½ cup heavy cream
2 tablespoons unsalted butter, softened
1 teaspoon vanilla extract
Cocoa powder, powdered sugar, or melted chocolate for coating
Instructions
Place chopped chocolate in a heatproof bowl.
Heat heavy cream in a small saucepan over medium heat until it just begins to simmer.
Pour hot cream over the chocolate and let sit for 2-3 minutes to melt.
Add butter and vanilla extract, then stir gently until smooth and glossy ganache forms.
Refrigerate ganache for about 1-2 hours until firm enough to scoop.
Using a melon baller or teaspoon, scoop small rounds of ganache and roll between hands to form smooth balls.
Roll truffle balls in cocoa powder, powdered sugar, or dip in melted chocolate for a shiny coating.
Place finished truffles on parchment paper and refrigerate again to set the coating.
