Ingredients
4 boneless, skinless chicken breasts
Salt and pepper to taste
½ cup all-purpose flour
2 large eggs
1 cup grated Parmesan cheese
1 cup panko breadcrumbs
1 teaspoon garlic powder
1 teaspoon dried Italian seasoning
2 tablespoons olive oil or melted butter
Instructions
Preheat oven to 400°F (200°C) if baking, or heat olive oil in a large skillet over medium heat if pan-frying.
Season chicken breasts with salt and pepper. Place flour in one shallow bowl. In a second bowl, beat the eggs. In a third bowl, mix Parmesan, panko, garlic powder, and Italian seasoning.
Dredge each chicken breast in flour, shaking off excess, then dip in eggs, and finally coat thoroughly with the Parmesan breadcrumb mixture. Press gently to adhere.
For baking: Place chicken on a lightly greased baking sheet. Drizzle or spray with a little olive oil or melted butter. Bake for 20-25 minutes until golden and cooked through (internal temp 165°F/74°C).
For pan-frying: Cook chicken in hot oil for 4-5 minutes per side until golden brown and cooked through. Drain on paper towels before serving.
